Sensory Analysis

Flavor profiles list the expected flavor attributes that a certain coffee should have. The intensity is indicated by the distance from the center. We offer these services:

  • Sensory analysis of green coffee components or roasted coffee products according to SCAA, COE, or other protocols
  • Training and leading sensory panels
  • Sensory experiment design (difference testing, etc.)
  • Descriptive sensory analysis (description and relative intensity of favor attributes)
  • Development of sensory standards for quality control

Sensory Attribute Specifications and Quality Control Version:1.0

Sensory specifications are more difficult to define than more literal physical measurements. It involves development of a common language and reasonable agreement as to the intensity of the experience. One individual’s perception of “high acidity” may be another individual’s perception of “medium acidity”.

Descriptive Cupping - Processes and Applications Version:1.0

Descriptive cupping goes into greater detail exploring particular flavor attributes that may be unique to the sample. The challenge of defining a coffee product in this way is that coffees from various origins are capable of a multitude of flavors.

Training coffee cuppers Version:1.0

Coffee is a complex beverage, containing literally thousands of flavor chemicals. These chemicals interact, cancel each other, may be prominently perceived or not perceived at all. For this reason, sensory analysis will always play a role in the analysis of coffee.
